Stuffed Besan Cheela Potli is a sumptuous snack, crammed with soft Paneer and mushy veggies, having the shape of a pouch. These are delicate pancakes best served as starters in pretty house parties, where you can flaunt your culinary skills and receive compliments from your guests.
Heat oil in a non-stick pan; once the oil becomes hot add cumin seed and sauté till it becomes light brown.
Now add ginger garlic paste, finely chopped onion and sauté till onion becomes little soft.
Add all the veggies–Finely chopped (capsicum, French beans, carrot) and mix it well.
Add all the spices salt to taste, cumin powder, red chilly powder, mix it well and cook on medium flame till the veggies become little soft.
Add crumbled paneer, garam masala and mix until well combined.
Paneer stuffing is ready.
To make Besan cheela:
Combine besan/gram flour, carom seed, red chilly powder, salt to taste, pinch of turmeric powder, plain curd, freshly chopped coriander leaves and make batter by adding water. Do not add water at once; gradually add water and make slightly thin batter.
Heat non-stick pan, once the pan becomes hot sprinkle little oil and wipe off the excess oil with cloth.
Now spread 2 tbsp of batter in the circular motion with the help of spoon and make thin chilla. Drizzle little oil all around the edges and on top of the chilla.
After 2 minutes flip it over and cook from other side too till it becomes light brown and make soft chilla.
Repeat the same process for the rest of batter to make chilla.
Take one cheela and put the paneer stuffing in the center and start pleating the edges of chilla, bring it to the center and with the help of green part of spring onion seal the potli tightly.
Microwave it for few seconds or if you do not have microwave can skip this step.
Serve Stuffed besan cheela potli hot with tomato ketchup, coriander chutney or any chutney of your choice.
