Instructions
How to make Besan ka chilla:
Take a large bowl and mix all the ingredients ( besan ,jeera ,ajwain, coriander leaves ,salt, red chily powder and green chily).
Gradually pour little water into it so that there should be no lumps.
Add water till it comes to a thick and smooth batter in pouring consistency.
Heat a non- stick pan on a high flame when it becomes hot reduces the flame on medium.
Spread little oil on a pan and pour a spoonful batter evenly in a clock wise.
Drizzle little oil around it and cook till it becomes brown and crisp.
Put little oil on the top and turn it upside down and cook the other side till it turns brown in colour.
Repeat the same process with the remaing batter and make 4-5 chilla for Kadhi.
Preparation for Kadhi:
In a big bowl, take the curd. Whip it well to make it smooth.
Add besan and all the spice powders under “for kadhi” and mix with the curd.
Use a wooden spatula or blender to dissolve the lumps into the curd.
Now, take a deep and thick bottomed pan and add first 4 items under "For Tempering of Kadhi".
Once the seeds start spluttering, add the remaining ingredients (curry leaves, hing, and red chily powder).
Now pour our dahi/curd besan mixture and stir continuously till the mixture starts boiling. Keep on stirring otherwise the yogurt will curdle.
Once the kadhi starts boiling and you smell a nice aroma, simmer the gas for 4-5 minutes so that it gets cooked well.
Cut chilla into small pieces and add the pieces to the hot kadhi.
Serve hot with rice or jeera rice, rotis or parathas
