The idea of preparing this came to me suddenly on one fine evening when I was literally hunting the fridge for making a light meal. I discovered it to be a sumptuous snack later on when my kids praised my attempt and wanted the same thing in their lunchbox.

Bread Cheese Pouch, a snack prepared with a sweet filling, is not only an evening treat but also a breakfast item. Savouring it on either time of the day can be a mood changer for all, especially for the cheese lovers. On a bad day, I usually prepare this savoury, to do away with sulkiness. However, if you have kids at home, you can always serve it to them, on a condition that they finish their homework as soon as possible.

When you take a bite of Bread Cheese Pouch, you will be surprised to see the colourful stuffing inside it. The credit for this goes to finely chopped red, yellow and green capsicum. When it comes to nutrition content, this titbit is high on it. Yes, I know you will definitely not agree with me on this when considering cheese but the other ingredients like capsicum, sweet corn, paneer and more importantly, multi grain or brown bread can be good for your health. ;

If you are not a fan of brown bread as I am, then you can replace it with white bread. Moreover, keeping in mind, the common dislike for it mostly among children, I have included white bread as an alternative. However, do not forget to trim its edges, as nobody likes it. Instead of wasting it by throwing it away, I would recommend making breadcrumbs with it.

As for the taste, corn lends sweetness to it whereas chilli flakes add a fiery flavour to it. To enhance its flavour even more, 3/4 tsp of oregano will do.

Bread Cheese Pouch

Ingredients

  • 6 slices white bread multigrain bread / brown bread
  • Butter

For stuffing:

  • 1/4 cup onion finely chopped
  • 1/4 cup red capsicum finely chopped
  • 1/4 cup yellow capsicum finely chopped
  • 1/4 cup green capsicum finely chopped
  • 1/4 cups sweet corns boiled
  • 2 tbsp Paneer cut into small pieces
  • 1/2 cup Mozarella cheese
  • 3/4 tsp chilly flakes
  • 3/4 tsp Oregano
  • 1/2 tsp Salt

To make Flour paste for sealing:

  • 3 tbsp cornflour
  • Water

Instructions

  • Put cornflour in a bowl and make paste by adding water. Flour paste is ready, keep aside
  • In a mixing bowl add all the ingredients mentioned under stuffing and mix it well. Mixture is ready for stuffing.
  • Now take bread slices and trim the edges. Do not discard the trimmed edges use it to make bread crumbs.
  • Put slices of the bread on rolling board and roll out the bread with the help of rolling pin very thinly by applying pressure.
  • Repeat the same process to roll rest of the breads
  • Now put the stuffing mixture at one side of the rolled bread, apply flour paste on all the sides and cover the bread to make the pouch. Press it gently and seal the edges tightly by using flour paste otherwise stuffing will come out while cooking.
  • Repeat the same process to make rest of the bread cheese pouch.
  • Melt butter in a non-stick pan and spread it evenly. Now put one by one bread cheese pouch in a pan and cook it on medium flame from downward side till it becomes brown and crisp.
  • Flip it over and toast it from other side too. This way cook the bread from all around till it becomes brown and crisp. Once cooked, take out from the pan.
  • You can also deep fry the bread cheese pouch or you can bake it in preheated oven also at 200 degree Celsius for 10 to 12 minutes or until it becomes golden brown, just brush the bread with butter or oil before baking.
  • Bread cheese pouch are ready to serve.
  • Serve hot with any green chutney or tomato ketchup.
