Do you know that cauliflower is not indigenous to India?  I was really surprised to know that my very own gobi was actually introduced in India through the British, in the late 1800s. And I thought my Indian relation with gobi was since the ancient times! However, with this I realize how as Indians we can embrace food in our own personal way. So I am going to Indianize a core Italian dish, macaroni (I won’t be using cauliflower today though).

Macaroni is a type of tube shaped pasta that is traditionally made with durum wheat, cultivated in Europe. It is a major staple in Italian cuisine. I admit the first time I heard about Macaroni was in the mid 90s, when Maggi introduced it. I even remember the jingle “maggi macaroni tum roz baby khana”J. Nowadays, it’s available by the name of Maggi Pazzta. Today, however, I am using regular macaroni, since I want cook a completely copyrighted dish.

This dish which I am sharing today is not only one of the easiest to make, with no prep work or expertise required, it is also a comfort vegetarian food. It is fit for a light evening snack, or a dieting supplement for the health conscious. There have been multiple occasions when I wanted to maintain a diet, not for weight management or anything, but just for general fitness. Vegetable macaroni was one of my go-to foods. It was also in for occasions of fever or cold, when you are so bored with soups and stews, this recipe can be of aid, being something wholesome and spicy; the right blend is delivered by this dish.

This is a basic dish, and you can just cook up your favorite style, be it Italian, Mexican or Indian. Although the vegetables I am using today is not really the conventional pumpkin, cauliflower and bottle guard; but, bell peppers and French beans. I know that they are more Westernized veggies; I am using them because I like them. You can always use your favorite veggies. However, the type of dish it is, bottle guard and pumpkin won’t suit with it. You need fibrous veggies like cabbage and beetroot go well though. I am using red chili powder to add some zing to the dish; you can always chuck that, or if you like it more peppery, use black pepper. Keep the vegetables crunchy, avoid overcooking them.

Indian Style Macaroni Recipe

Ingredients

  • 250 grams Macaroni
  • 2 medium sized onion roughly chopped
  • 2 medium sized tomatoes roughly chopped
  • 1/3 cup French beans finely chopped
  • 1/3 cup Red bell pepper finely chopped
  • 1/4 cup Yellow bell pepper finely chopped
  • 1/4 cup Capsicum finely chopped
  • 1/3 cup Carrot finely chopped
  • 1/4 cup spring onions finely chopped
  • 1 inch ginger grated
  • 1 tsp garlic finely chopped
  • 2- 3 pieces green chilly finely chopped
  • coriander leaves Freshly chopped
  • Salt to taste
  • ¾ tsp red chilly powder
  • ½ tsp Garam masala
  • ½ tsp black pepper powder
  • 1 tbsp tomato ketchup as required
  • 2 tbsp oil

Instructions

  • Boil water in a deep pan and when the water starts boiling add salt, few drops of oil and macaroni.
  • Once the macaroni gets cooked, drain off to a colander and rinse with water.
  • Set aside
  • To make the Onion tomato paste-Put oil in a pan and add chopped onion, tomatoes and sauté it on medium flame for 4-5 minutes or till tomatoes becomes soft and mushy. Keep aside and cool down for sometime.
  • Heat oil in a non-stick pan
  • Add grated ginger, finely chopped garlic, chopped green and sauté it for few seconds on medium flame.
  • Now add the tomato onion paste, red chilly powder and cook on medium flame.
  • Lastly add all the veggies and mix it well.
  • Add salt to taste.
  • Once the veggies are done add finely chopped spring onions, tomato ketchup, garam masala, black pepper powder and lastly add boiled macaroni.
  • Mix it until well combined.
  • Indian style Macaroni is ready to serve.
  • Garnish with spring onions, coriander leaves and serve hot.

How to make Indian Style Macaroni:

  • Boil water in a deep pan and when the water starts boiling add salt, few drops of oil and macaroni. Mix it well and cook till it gets tender. Stir at regular intervals to avoid sticking.  It takes around 7-8 minutes to get dense.

  • Once the macaroni gets cooked, drain off to a colander and rinse with water. Set aside (You can also toss the macaroni in oil to avoid sticking with each other and keep aside).

To make the Onion tomato paste:

  • Put oil in a pan and add chopped onion, tomatoes and sauté it on medium flame for 4-5 minutes or till tomatoes becomes soft and mushy. Keep aside and cool down for sometime.

  • Make it warm and make a smooth paste of it by using sufficient water. Keep aside

  • Heat oil in a non-stick pan, once the oil becomes slightly hot add grated ginger or you can also add ginger paste, finely chopped garlic, chopped green chilly (don’t add chilly while making for kids)and sauté it for few seconds on medium flame.

  • Now add the tomato onion paste, red chilly powder and cook on medium flame till the oil begins to separate from the mixture.

  • Lastly add all the veggies: Finely chopped (Carrot, French beans, Green bell pepper, Yellow and red bell pepper) and mix it well.

  • Add salt to taste to make the veggies cooked fast and sauté it on medium flame till all the veggies become little soft. Do not overcook the veggies, let it be crunchy.

  • Once the veggies are done add finely chopped spring onions, tomato ketchup (add as per your taste), garam masala, black pepper powder and lastly add boiled macaroni. Mix it until well combined.

  • When all the spices get coated well with macaroni add chopped spring onions, freshly chopped coriander leaves and mix it well again.

  • Indian style Macaroni is ready to serve.
  • Garnish with spring onions, coriander leaves and serve hot.
