Just like my other recipe “roti pizza”, I am going to show you today another simple yet very interesting recipe, roti noodles. Yes, that is right; you can actually make noodles by simply shredding chapatis.

I first saw this recipe on TV, it’s not really my own idea. However, I did add some of my personal touch to make my own version. I will always remember the day when I first made it. My children could not even guess that was not flat noodles bought from the market. However, there is no fooling my husband with this; he readily guessed what has been done.

Noodles are indeed made with wheat or flour. However, as with conventional noodles, you have to boil it before adding other ingredients, in this recipe, it is the opposite. You are supposed to add the roti last of all. While preparing it, keep in mind that if your vegetables release any water then wait for the moisture to dry out, before you put the shredded chapatis. Otherwise, your chapati flat noodles will become soggy.

Ingredients

  • 2 roti Leftover
  • 2 tbsp Capsicum sliced
  • 2 tbsp tomato sliced
  • 1 small onion sliced
  • 1 small green chilly finely chopped
  • Salt to taste
  • 2 tbsp carrot sliced
  • 1/4 tsp red chilly powder
  • 1/4 tsp pav bhaji masala
  • Pinch black pepper powder
  • Tomato ketchup as required optional
  • 11/2 tsp oil
  • 1/4 tsp cumin seed
  • 1/4 tsp garlic finely chopped
  • 1/4 tsp ginger grated
  • coriander leaves Freshly chopped

Instructions

  • Cut each roti into long strips and 1/4 inch thick.
  • Heat oil in pan, once the oil becomes hot add cumin seed and cook till it becomes light brown.
  • Now add chopped onion and crushed ginger, garlic and sauté on medium flame till the onion becomes light brown in colour.
  • Add chopped capsicum, tomato, carrot, green chilly (do not add while making for kids) and mix it well.
  • Now add salt to taste and saute it on medium flame till the veggies becomes little soft, let it be crunchy.
  • Add red chilly powder, pav bhaji masala and mix it well with veggies.
  • Lastly add Roti, pinch of black pepper powder, tomato ketchup and mix it until all the spices get well combined.
  • Roti noodles are ready to serve.
  • Garnish with coriander leaves and serve Roti noodles hot.

How to make leftover roti noodles:

  • Cut each roti into long strips and 1/4 inch thick.
