Aate ka halwa is made from whole wheat flour, sugar, cardamom powder and nuts. It is popular in North India. Ate ka halwa is also known as Kada Prashad which is made on special occasions like Ashtami or Navmi feast during Navratri.
) When the ghee completely melt down and starts bubbling add wheat flour in it.
) Keep the flame on low throughout the process.
) Mix flour and ghee together and sauté, while sautéing wheat flour will absorb all the ghee. At this moment if you feel like adding more ghee then add it accordingly because the taste is derived from ghee.
) Keep on stirring till the wheat flour becomes dark brown in colour and produce nice aroma. If you don’t stir the bottom will stick to the pan and you will have burn flavor.
) Once the wheat flour turns into a perfect dark brown colour pour milk. The mixture sizzles, so be careful while adding the milk.
) At this point put the flame on medium and quickly stir the mixture so that no lumps are formed.

aatey ka halwa410) After adding sugar sprinkle little water on top which makes halwa soft and stir well till all the water get absorb and sugar gets caramelize.
) Add cardamom powder and chopped almonds and give it a mix again.
) Garnish with almonds and serve.
Notes
Add Dry fruits according to your taste. While making halwa you can use only water instead of milk.
