This rose sandesh recipe is a popular Bengali dessert. When it comes to confectionery, how can one forget about Sandesh from Girish Chandra Nakul Chandra, an all-time favourite Indian dessert, especially among the Bengal's! High in protein, made from soft ‘chena’ (paneer) and having a delightful flavor, you can consume it as a dessert or a snack and even by itself. I have many friends in Kolkata, whose meals end only with a Sandesh, the ones that have a rose essence.
Put soft paneer/ chena in a deep bowl and add 3-4 tbsp of sugar. Mash it with hands until the chena/ paneer becomes smooth.
Put the mixture in a non-stick pan and cook it on low flame till all the moisture gets evaporated. Keep on stirring continuously so that it does not get burn. Do not cook it on high flame as paneer/ chena mixture will become hard.
Lastly add rose essence/ water, mix it well and keep aside to get slightly cool.
Once the mixture becomes warm put it in a jar and pulse the mix in a mixer jar. This way it will be very soft and melt in mouth.
Now take a small portion of the mixture, roll it in your palm and then flat it to make sandesh.
Lastly garnish it with some rose petals and serve.
