Squeeze the grated carrot and cucumber and discard the excess water.
Put hung curd in a bowl and add all the veggies and spices (except bread).
Mix until well combined.
Take a bread slice, spread a thick layer of hung curd mixture on the bread and then cover with another slice of bread to make the sandwich.
Grease both the side of the bread with butter.
Heat non-stick pan and put the sandwich in a pan. Cook for a minute from lower side.
Flip the sandwich and cook till both the sides turn golden brown
Potato Sandwich is ready, slice them diagonally. Serve the sandwich with Cilantro Chutney or tomato ketchup.
You can also use brown bread to make curd sandwich. Squeeze the water of cucumber and carrot otherwise curd will become thin. I have not used green chilly but if you want spicy then add as per your taste. You can also add veggies as per your liking.
