Instructions
Heat oil in a pan and when the oil becomes hot add mustard seed, cumin seed and let it splutter.
Once the seed starts crackling add grated ginger, chopped garlic, green chilly and stir it for few seconds.
Add chopped Onions and stir it on medium flame till the onions becomes translucent.
Add chopped tomatoes, salt and mix it well.
Add turmeric powder, coriander powder, red chilly powder and cook till the tomatoes become soft and mushy.
Add cutted boiled potatoes, chopped coriander leaves, garam masala, kasuri methi and mix it well till all the spices gets well combined.
Add water as per the desired consistency, mix it well and bring it to boil.
Cover the lid and cook for 2-3 minutes.
Open the lid and the spicy potato curry is ready to serve.
Serve hot as a side dish with Chapati and rice.
