Instructions
Heat 2 tbsp of oil in a pan, once the oil becomes hot add crushed garlic and sauté it for few seconds
Now add chopped celery and sauté it for few seconds.
Now add veggies (capsicum, French beans, carrot, red bell pepper), sauté it on high flame for 3 to 4 minutes.
Do not over cook the veggies; just cook it slightly to make it crunchy.
Once veggies get cooked add ½ of the spring onions (keep ½ of the remaining spring onions for further use) and mix it well.
Lastly add boiled rice, white pepper powder, vinegar, schezwaun chutney, salt, mix it well until all the spices gets blended well.
You can adjust the quantiy of chutney as per your taste as it is little spicy.
Schezwaun fried rice is ready to serve.
Garnish with remaining spring onions and serve hot.
