My mother used to make ice-creams when I was a kid, and when refrigerators were not so common in normal households.  She had this ice cream maker machine, wherein one had to stuff ice and salt and include a long process of repetition of churning the ice-cream and freezing over again. Now those times seem so elaborate and complicated, but Mom used to make with the same happiness as I feel today.

This is the easiest ice-cream recipe after, after perhaps freezing fruit juice. It does not require the long process of repeated freezing and churning, nor condensing the milk, like in conventional kulfi and other milk based ice-cream. You can make it with whole cream milk, or low fat milk, as you wish.

Remember one thing, don’t stuff the mould with the cut fruit, otherwise, it will not set properly, and is likely to crumble as soon as you take it out from the mould. You can use the same process to make other flavors such as apples, cherry, raisins, watermelon and pears.

In order to take out the ice cream evenly, dip this in a little warm water, not more than a few seconds. Y you just want to loosen the ice-cream, and not melt it. You can also dip it in normal water, but the warm water will do it fast.

My kid’s friends often come to our house in the evening to play, and it gives me a lot of pleasure to serve them with something like this, and to see them feel really joyous. It’s amazing how you can win children’s hearts with such simple things, and they appreciate you unconditionally. Nowadays, it’s not a big deal for the children to have ice-cream, unlike how “exclusive” it used to be when we were kids. And the “barf ka gola” was one of the few, affordable choices. Today’s kids definitely have more choices. Yet still, when on multiple occasions I have served my kids and their friends with my homemade ice cream delights, they shower me with their cheers. Compliments from adults definitely feel good, but it is the raw and innocent joyous smiles of children that touch the heart most deeply.
