Take a mixing bowl put gram flour and add all the spices- Carom seed, cumin seed, Mango powder, freshly chopped coriander leaves, red chilly powder and salt to taste.
Add water gradually.
Mix it well.
Preparation of pakora:
Trim the edges of bread.
Take 4 slices of bread and spread a teaspoon of coriander mint chutney on two slices of bread.
Spread a teaspoon of tomato sauce on another two slices of bread.
Cut the cottage cheese into ½ inch thick squares.
Take a slice of paneer and put it on the tomato sauce bread.
Sprinkle some chaat masala and salt on the paneer slices.
Now place the Coriander mint chutney bread on top of the paneer bread slice and press it slightly.
Spread little oil in the pan so that pakora does not stick to the pan.
When the pan becomes medium hot, take the sandwich and dip in the besan batter and coat evenly on both the sides.
Put the besan batter coated sandwich in the hot pan.
Drizzle little oil on top of the coated sandwich. Now cook the bread pakora for 2 minutes on low flame from lower side.
After 2 minutes flip the pakora and cook from another side for 2 minutes on low flame.
When the light brown spots appear on both the sides keep the flame on medium and cook till it turns golden brown and crisp.
Oil free paneer bread pakora is ready, slice them diagonally.
Serve hot with tomato sauce or any Coriander chutney of your choice.
