Spinach Corn Sandwich Recipe for Breakfast with cheese

Spinach Corn Sandwich recipe with step-by-step pictures and a recipe video. Bread was always something that I loathed in my childhood and was never much of a bread-jam or bread-butter combination fan. It really took a lot of time, effort and experiments, for me to start liking it. Thanks to my elder sister! Had it not been for her, I would never have allowed bread into my house. 😀 The cheese sandwich that she secretly made in the absence of elders is something that I still recall and perhaps snacks made stealthily seem to taste much better than regular ones. Childhood days were simply awesome, with us experimenting with food and enjoying it together.

Spinach Corn Sandwich Recipe for Breakfast with cheese

The Spinach Corn Sandwich recipe that I am going to share today is one of her specialities I admit, but as always, I have personalised it according to my taste and preferences. Similar to the Spinach Corn Sandwich recipe Cafe Coffee Day version, it has an amazing filling, the spice levels of which have been augmented using red chilli flakes, some Italian seasoning and a tinge of black pepper.

To be honest, I feel what makes the recipe a hit among all is its health quotient. It’s a wholesome snack with loads of spinach, sweet corn kernels and brown bread. Of course, veggies are not much appreciated by kids, especially my younger one. I have tried making him watch how Popeye munches on spinach and gains strength but even this trick of mine failed to impress him. So in a final attempt, I tried grating cheese into it, not just into the filling but also over the spinach corn mixture to make it a kid-friendly dish. And this was how I nailed it!  😀

Spinach Corn Sandwich Recipe for Breakfast with cheese

The spinach sandwich Indian version is now their favourite lunch box recipe and even convenient for me to prepare when I am pressed for time.

However, if you are a health freak like my husband, concerned about the Spinach Corn Sandwich calories, I would suggest avoiding the second helping of cheese just before covering the thick blend with another brown bread slice. Moreover, a generous amount of it won’t harm you if you consume it occasionally.   😛

Spinach Corn Sandwich

Spinach Corn Sandwich Recipe for Breakfast with cheese and sweet corn.

Ingredients

  • 4 slices Bread brown
  • 2 cups Spinach finely chopped
  • 1 cup Sweet corns kernels boiled
  • 1/2 cup Onions finely chopped
  • 2-3 tbsp Butter
  • Grated Amul cheese as required
  • 11/2 tsp Flour All purpose
  • 1/2 cup Milk
  • 11/2 tsp Garlic finely chopped
  • 1/2 tsp Black pepper powder
  • 1/2 tsp Red chilly flakes
  • 3/4 tsp Salt or as per taste
  • 1/2 tsp Italian seasoning

Instructions

  • Heat the butter in a pan, once it gets melt to add chopped garlic and saute it for few seconds or till the raw smell goes away.
  • Now add all purpose flour and roast it for few seconds on low flame, do not make it brown just roast it slightly as we do while making the white sauce.
  • Once roasted add finely chopped onions and cook it for a minute.
  • Now add chopped spinach, boiled sweet corn kernels and mix it well and cook it for 2 minutes.
  • Once cooked add salt, mix it well.
  • Lastly add1/4 cup milk and mix it well and cook it for few seconds.
  • Once cooked it will get slightly thick as I have added maida.
  • Once gets slightly thick add rest 1/4 cup of milk or you can add more or less milk as per your required consistency.
  • Cook till it boils.
  • Now add seasoning red chilly flakes, black pepper, Italian seasoning, mix it well
  • Add 2-3 tbsp of grated cheese, mix it well.
  • Once the mixture becomes medium thick switch off the flame as the mixture will become thicker when cool down. Transfer the mixture to another pan and keep aside to cool down for some time.
  • Do not make thin mixture otherwise sandwich will become soggy.
  • To make Sandwich:
  • Take one bread slice and spread the thick layer of the spinach corn mixture evenly
  • Grate some cheese on top if you want to make it cheesier and cover the mixture with another bread slice.
  • Apply butter on both the sides and cook it on medium low flame by pressing it with the spatula from both the sides till it becomes golden brown and crisp.
  • Cheese Corn Spinach Sandwich is ready to serve.

You can adjust the quantity of corn and spinach as per your taste. Add more cheese as per your liking.

How to Make Spinach Corn Sandwich Recipe:
