Tomato and garlic Bruschetta Recipe with basil leaves – Western delicacies have always been my favourite since childhood. I remember my vacations at Singapore when mornings meant garlic bread, mushroom sauce and hot soup. The aroma of freshly baked garlic bread was simply irresistible and I still recall the tempting bright yellow surface of it.

From the very beginning, i loved bread recipes, so you can find many bread recipes in my recipes. I love veg suji buns, bread pouch, masala pav, bread toast or Italian veg katori, Homemade Cheese Garlic Bread Recipe,  which are very good delicacies for breakfast.

Today, I have made up my mind to re-create my childhood memories by preparing this treat all by myself. So here I am, penning it down for you to follow. You must be thinking what makes this Bruschetta special. I would say it is a fusion of my own culinary ideas and definitely the authentic way of presenting it.

If you have no idea about Bruschetta then let me introduce it to you. This Italian dish is a wonderful blend of roasted bread with a tasty yet healthy topping. Cheese being the classic ingredient here, you and your kids will definitely love munching on these Antipastos.

 

Preparing the topping is a lot easier than what you think, and serving it as an entree is going to work wonders in parties. It is so much easier to prepare that even an amateur cook can learn it in a moment! Isn’t it amazing? You just have to mix the black olives, green olives, cherry tomatoes and mozzarella cheese all together to create a heavenly topping.

I first prepared this comfort food on my daughter’s birthday party. I still recall the appreciations that I got and finally thought of jotting it down for you all to try. To reveal a little secret of mine, try pairing Bruschetta with a hearty soup, as I did at that dinner party. You will surely receive compliments from your near and dear ones!

I believe the key ingredient of this savoury appetiser is finely diced tomatoes, mixed with fresh basil leaves, crushed black pepper corns and finally tangy green and black olives. The best thing about this recipe is that it takes a mere 10 minutes to prepare and 15 minutes to cook. So if you are pressed for time, hurrying before presenting an entree at a get-together, then Cheesy Garlic Bread or Bruschetta can be your pick for the menu.

Ingredients

  • 1 French loaf
  • 3+1 tbsp. Olive oil
  • 10-12 garlic cloves crushed
  • 7-8 Cherry tomatoes cut into half
  • 7-8 black olives sliced pitted
  • 7-8 green olives sliced pitted
  • ½ cup mozzarella cheese grated
  • 5-6 Basil leaves
  • ½ tsp. salt
  • ½ tsp. black pepper corns crushed
  • 1 tsp. oregano

Instructions

  • Slice bread diagonally.
  • Mix 3 tbsp. of olive oil and crushed garlic in a bowl and thinly spread on both the sides of cut sliced bread just like we spread butter.
  • Heat a non-stick pan and place the bread slices and toast till it becomes brown and crisp from both the sides. Flip and toast it from other side too. It takes around 4-5 minutes to get roasted.
  • Repeat the same process for rest of the bread slices.
  • In a mixing bowl add cherry tomatoes, black olives, green olives, mozzarella cheese, roughly torn basil leaves, salt, crushed pepper, oregano and 1 tbsp. of olive oil, mix it well. Mixture is ready now
  • Place a spoonful mixture on each of toasted bread.
  • Place the prepared bread on a serving dish and serve immediately.

How to make Bruschetta:

  • Slice bread diagonally.

  • Mix 3 tbsp. of olive oil and crushed garlic in a bowl and thinly spread on both the sides of cut sliced bread just like we spread butter.

  • Heat a non-stick pan and place the bread slices and toast till it becomes brown and crisp from both the sides.  Flip and toast it from other side too. It takes around 4-5 minutes to get roasted.
