Like you, most of my encounters with this dish used to happen at a distant eatery or restaurant, on special occasions when my husband took us out for lunch/dinner. However, nowadays, I prepare it at home, because I believe homemade stuff has a different flavour, which restaurants lack.

My kids and my husband who are not at all fond of veggies loved it. Nowadays, special occasions mean homemade Vegetarian Schezwan Fried Rice served with Sweet Corn Soup or sometimes with Lemon coriander soup and most favorite of mine is veg manchurian.

I believe three major ingredients make up this incredible peppery dish– home-produced Schezwan chutney or sauce, crushed garlic and all those colour adding veggies, which need to be sautéed and left crunchy enough for introducing that perfect texture. Schezwan Veg Fried Rice no longer happens to be our most ordered food item today. This is something, which I cook at home for house parties or for my husband’s office potluck parties. Schezwan Fried Rice

Ingredients

  • 4 cups Basmati rice
  • 1 cup Spring onions chopped
  • 1/3 cup Capsicum chopped
  • 1/3 cup French beans chopped
  • 1/3 cup Red bell pepper
  • 1/3 cup Carrot chopped
  • 1 tbsp Celery chopped
  • 11/2 tsp Schezwan chutney homemade
  • 1 tsp Vinegar
  • 1 tsp Garlic crushed
  • Salt to taste
  • 3/4 tsp white pepper powder
  • 4 tbsp sesame oil

Instructions

  • Heat 2 tbsp of oil in a pan, once the oil becomes hot add crushed garlic and sauté it for few seconds
  • Now add chopped celery and sauté it for few seconds.
  • Now add veggies (capsicum, French beans, carrot, red bell pepper), sauté it on high flame for 3 to 4 minutes.
  • Do not over cook the veggies; just cook it slightly to make it crunchy.
  • Once veggies get cooked add ½ of the spring onions (keep ½ of the remaining spring onions for further use) and mix it well.
  • Lastly add boiled rice, white pepper powder, vinegar, schezwaun chutney, salt, mix it well until all the spices gets blended well.
  • You can adjust the quantiy of chutney as per your taste as it is little spicy.
  • Schezwaun fried rice is ready to serve.
  • Garnish with remaining spring onions and serve hot.

How to make Schezwan fried rice:

  • Heat 2 tbsp of oil in a pan, once the oil becomes hot add crushed garlic and sauté it for few seconds
