Atta Biscuits are a ‘Desi’ version of cookies to me. They are light, crispy, eggless and more importantly, easy to bake. Even you would agree with the fact that nothing tastes better than a biscuit dipped in ‘chai’ and we Indians have a distinct emotion attached to this way of enjoying it. Teatime is probably the best time of the day, with Indians gossiping over a hot cup of chai and Atta Biscuits being the mandatory complement.
We always think that making cookies at home is very tough and one will require oven or microwave to bake it. But it’s too easy and i am showing you a way to make it in pressure cooker.

These have always topped my list of favourites. I never used to share them with any of my siblings; such was my love for them! Well, now I prepare it for my kids at home and they too fancy them as I did. These flat and crispy cookies remind me of long train journeys when they were a staple snack, which my mother used to carry in her goody bag.
To me, Atta Biscuits are a simple snack, demanding only the basic pantry staples, all of which are stirred together for making ‘not too rich’ crumbly cookies. Even the sweetness is moderate which makes it perfect for daily consumption. It certainly does not have that extravagance of chocolate filled cookies but is still a favourite among all, as it has its own appeal. Both my children love its taste, lying somewhat between a scone and a wheat-based cereal.
Now coming to its preparation, it hardly takes 30 minutes to arrange and 20 minutes of cook time, with simple ingredients like wheat flour, butter, vanilla essence, icing sugar and milk, most of which are stored in your pantry and the rest available with your nearest grocery retailer. Moreover, you can bake it in a cooker itself, which is truly amazing.
This recipe promises 30-40 pieces if you zealously follow the steps, which means you are ready with an entire week’s stock. So you can easily replace the store bought ones with the homemade ones, as I do, or take it with you when you travel. When your mood demands something different, you can also enjoy them in another way. Cut them into nice shapes with the help of a cookie cutter and decorate them with sweet toppings like your favourite jam or jelly.

Aata Biscuit Cookies
Ingredients
- 150 grams wheat flour
- 100 grams butter
- 50 grams icing sugar
- 1/2 teaspoon vanilla essence
- 1 teaspoon milk as required
Instructions
- Cream the butter, sugar and vanilla essence in a bowl till light and fluffy.
- Fold the wheat flour with the mixture little at a time. Make dough with your hands.
- Lastly add 1 tsp of milk to make the dough soft and knead the dough again.
- Leave it to set in refrigerator for 15 mins
- Take out the dough from refrigerator and divide the dough into two equal parts.
- Place the dough ball over rolling surface and roll out thick using a rolling pin.
- Cut the rolled dough into desired shape with the help of cookie cutter.
- Grease the tin or any pan in which you are going to bake the biscuit with butter and place the biscuits into the greased pan.
- Do not over crowd the pan, bake in batches.
- Fill the cooker with 11/2 cup of salt and place the rack on top of it.
- Preheat the cooker for 8-10 minutes on medium low flame with the salt.
- Once the salt gets hot enough, Put the baking dish on the rack inside the cooker.
- Cover the lid of the pressure cooker, remove the whistle and bake the cookies on medium flame for 15 to 20 minutes.
- After 15 minutes, take out the baking dish from the pressure cooker.
- Remove from baking tray and leave to cool.
- Biscuit will be soft when it is hot but as it will cool down become hard.
- Aata biscuits in pressure cooker are ready to serve.
- Store the Aata biscuit in an air tight container.

(We are following the same principle as in the oven but here the salt is heated and the cake gets cooked in the heat produced by the salt.) - Once the salt gets hot enough, Put the baking dish on the rack inside the cooker.
- Cover the lid of the pressure cooker, remove the whistle and bake the cookies on medium flame for 15 to 20 minutes.
- After 15 minutes, take out the baking dish from the pressure cooker.
- Remove from baking tray and leave to cool.

Hello recipe looks very easy. Thanks but I don’t have fridge at home. Can u tell me any replacement or can I skip that n make biscuit
