Cheesy Veg Disc is a kind of Sandwich Recipe and Bread Recipe. Cheesy veg disc is a very popular bread recipe. I was just surfing internet and when found this recipe by Tarla Dalal. There are many variations of this recipe. So i too wanted to make mine also.

Cheese Veg Disc sandwich

I have made many of bread recipes which you can also check out such as Bread Paneer Paratha, bread rasmalai, bread uttapam etc.

In this cheesy veg disc recipe I have made small rings. When i made big rings then while putting it into the toaster, the bread was getting flat due to pressure. So i made smaller rings to achieve this. But if you are baking then you can make bigger bread rings. Though bigger bread rings looks more appealing.

Make this for breakfast or evening snacks, all will love your effort.

In the process of cutting discs, there are lots of wastage of bread. You can use these breadcrumbs in many ways like you can make bread idli and  bread pizza with them.

I have used lots of veggies including different types of bell pepper, capsicum carrot and cabbage. You can also ad tomato or other veggies of your choice.

How to make cheesy veg disc:

  • Heat olive oil in a non-stick pan, once it becomes little hot add all the veggies (red & yellow bell pepper, green capsicum, chopped carrot, onion, sweet corns), mix it well and sauté it on medium flame till it becomes little soft. Do not over cook the veggies let it be crunchy.

  • Once the veggies gets slightly cooked add all the spices (salt, black pepper powder, oregano, red chilly flakes), mix it well and cook it for further 2 minutes on medium flame. Vegetable stuffing is ready.

  • Now let’s cut the bread slices into round shape. For this we required one big and one small cutter. You can take any sharp disc cutter like katori, lid of any box, cookie cutter.

  • First take big cutter and cut bread slices into round shape or discs. Repeat the same process for all the bread slices.
  • After cutting the bread slices into big round shape or disc, take small cutter and cut the small size disc from few of the bigger bread disc to make the ring. Discard the center round and use outer ring to make the vegetable disc.

  • Here I am not going to bake the disc so cook all the bread and rings in a toaster till it becomes brown and crisp.

  • Take one roasted  big bread disc and spread thick layer of cheese spread  evenly onto one side of roundel bread so that ring will get stick to the base properly.  I made thick ring so spread some vegetable stuffing on top of the cheese spread but if the ring is thin then you can skip this step.
  • Now place the bread ring on top of the bread spread base and press it lightly. I made thick ring but you can make the ring thin also.

  • Put the prepared vegetable stuffing in the center of the ring and spread it evenly in the level of the bread.

  • Lastly garnish it with some grated paneer and cheese.

  • Repeat the process to make the entire vegetable disc.
  • Cheesy vegetable disc is ready to serve.

To bake in oven:

  • Apply some butter to the edges of the ring with the help of a brush.
  • Bake in pre-heated oven at 200 degree Celsius for 10-15 minutes till it becomes brown and crisp
