Uttapam or Uthappa is basically a type of pancake belonging to South India, mainly Tamil Nadu. It is traditionally cooked with the same ingredients as that of Dosa and Idli, which is a batter of rice flour and lentil, but unlike the crisp dosa, Uttapam is soft and spongy like idli. Today I will be using my daily bread, instead of the traditional batter to make Uttapam.
Not that I have invented this recipe, but it certainly has my own twist. I just love to savour it with hot and spicy tomato chatni.
I have also made some other snacks recipes such as suji potato rolls, Suji Kachori, Kalmi Vada, Besan Ka Chilla, Pav Bhaji etc.
Even though Uttapam is primarily known as a breakfast item, it is rather multipurpose that can very well go as a snack, a staple, or a stand alone meal along with other breakfast recipes. It is heavy and highly nutritious. It is commonly stuffed with tomato, onion and other vegetables, can be eaten plain with chutney and sambhar, or with tea and coffee.
It is a very basic item, at the same time it can be versatile as well, just use your favourite veggies enjoy this delightful south Indian dish. There’s no “have to” quotient in it. I lost count of how many types of Uttapam I have eaten. I prepare with whatever is available in the fridge or what my children demand for! As a mother of two, I have to cater to their tantrums you see.
The best part is that, it is a compact food; you can have it on the go, eat it like pizza with one hand, or eat it with a fork if you want. It is a great lunch item for children and since it’s “customizable” it is favourite with children as well. I make it more tempting by just adding grated cheese or mayonnaise as topping. My little ones just love it.
Today I will be using bread with a bell pepper stuffing. I am using plain milk bread, but you can use brown or multigrain bread. If you like it spicy then add some green chillies or better, red paprika for a tangy zing. Consistency of the batter is the main part of this recipe, it should be in a pouring consistency, but not running. Next is the temperature of your tawa, keep a low to medium flame, a burning tawa will char your Uttapam. Now wear the chef’s cap and follow the instructions. I am sure you would fall in love with this easy to make, no fuss recipe.
