How To Make Gatte ka Pulao

Gatte ka pulao is a very popular Rajasthani dish made of gram flour and rice. If you don’t have any vegetable at home or there is any festive occasion, when plain rice cannot be served, then gatta Ka pulao is the best dish you can make.

Gatta’s are made of gram flour dumplings steamed and flavoured with spices. Gatta pulao is an authentic dish well known in the states of Rajasthan. It is an all time favorite dish in the Marwari cuisine. This dish may be served during lunch or dinner.

Rajasthani Gatte ka Pulao - Rice Recipe in Hindi

Gatte ka pulao is a very popular Rajasthani dish made of Gram flour and Rice. If you don’t have any vegetable at home or there is any festive occasion when plain rice is not served this is the best dish you can easily make.

Ingredients

  • 200 gm basmati rice or medium to long grained rice
  • 2 pcs bay leaf
  • 3-4 pcs Cloves
  • 2 tbsp Ghee
  • 8-10 pcs Cashew Nuts
  • 4 -5 pcs Gatta
  • Salt to taste
  • ¼ tsp cumin seed
  • ¾ tsp black pepper

Instructions

  • Wash and soak rice for 15-20 mins.
  • Boil water in a pan. Put the rice in boiling water and cook uncovered on low heat until the rice becomes firm but tender. Do not overcook the rice otherwise the rice grains will get break and mushy. Each grain of rice should be separate.
  • When rice is done sieve it and make it cool completely. Do not add hot rice otherwise the rice grains will get break and mushy.
  • Heat Ghee in a pan.
  • When ghee becomes slightly hot add Cashew nuts and toss it on medium heat till it turns light brown in colour and keep aside.
  • In the same pan now add boiled and cutted Gatta and shallow fry on medium heat till it turns light brown and keep aside.
  • In the remaining ghee add cloves, bay leaf and fry for few seconds. If you require more ghee then add it accordingly.
  • Now add cooked rice, fry Cashew nuts, fried Gatta into it and mix it well.
  • Add salt and black pepper and mix well.
  • if rice has become dry then add 2, 3 tsp of water and mix it well.
  • Cover the lid and cook for a min.
  • Gatta rice is ready and can serve with any Indian curry.

You can add peas and Raisins to make rice colourful while making Gatta rice.

How to make gatta pulao:

  • In Rajasthani Gatte ki Sabji I took 250 gm of Gram flour but to make Gatta Rice I took 1 cup of Gram flour and add ingredients accordingly.
  • Break off a piece and roll into shape and size of a finger.
  • Drain, cool and chop into round 1-1 1/2 cm. long. Keep aside.
  • How to make gatte ka pulao:
