Ingredients

  • 1 cup Basmati rice Long grained rice/soaked
  • 1 big size Onion Chopped
  • 1 medium sized Tomato chopped
  • 1 medium carrot peeled and diced
  • 6-7 ½ inch pieces french beans cut
  • 1/2 Cup Cauliflower Chopped Florets
  • ¼ cup Green Peas
  • ½ tsp Ginger Garlic paste
  • ½ tsp Cumin seed
  • 2 Bay leaves
  • 2-3 Pieces Cloves
  • ½ inch Cinnamon stick
  • 1 tsp Garam Masala
  • 1 tsp Red Chilly Powder
  • 1 tsp Pav Bhaji masala
  • Salt to taste
  • 1 tbsp Ghee
  • 1 tbsp oil

Instructions

  • Wash and soak basmati rice in enough water for 15 mins. Drain water after 15 minutes and keep aside until needed.
  • Heat ghee and oil both together in a pressure cooker on medium flame.
  • Add cumin seed, cinnamon stick, cloves, bay leaves and sauté for 30 seconds.
  • When the spices begin to sizzle add sliced onion and sauté for a minute on medium flame.
  • Add ginger garlic paste and sauté well until the raw smell of ginger garlic disappears.
  • Add all the vegetables chopped tomato, French beans, carrot, cauliflower, peas and stir fry them for 2 minutes.
  • Add garam masala, pav bhaji masala, red chilly powder, salt and mix it well with all veggies.
  • Add soaked (drained) rice and saute gently for 1 to 2 minutes till the oil/ghee has coated the rice grains evenly.
  • Add 2cups of water and mix it well.
  • Close the lid and cook over medium flame to high flame for 3 whistles. Turn off flame.
  • Allow the steam to escape naturally before opening the lid. Remove the lid and gently fluff the rice.
  • Transfer it to a serving bowl and garnish with fresh chopped coriander leaves.
  • Indian vegetable pulao is traditionally served with cucumber raita or onion raita, boondi raita, plain raita ,papad and pickle.

Notes

Just use rice and water in 1:2 ratios. i.e. for every one cup rice two cups water should be added.
You can also add your choice of veggies to the Pulao.
