सुखा काला चना कैसे बनाते है -Black Chana Masala

आज हम बनाने जा रहे हैं चना मसाला| इसे हम काला चना भी कहते हैं|इसे आमतौर पर नवरात्रि के दिनों में बनाया जाता है| यह नवमी के दिन कन्याओं को पूरी के संग खिलाया जाता है| इस दिन 9 कन्याएं बुलाई जाती है उन्हें काला चना पूरी और सूजी या आटे का हलवा दिया जाता है|

Its a popular Upvas Recipe like Moong Dal Ka Halwa, alu ka halwa, Kuttu ki puri, Sabudana Khichdi etc.

मैं इसे अन्य दिनों में भी नाश्ते या खाने में बनाती हूं| तो चलिए इसे कैसे बनाएं देखतें है|मैंने यहाँ लहसुन और प्याज़ का इस्तमाल किया है अगर आप इसे नवरात्री के लिए बना रहे है तो आप इसे छोड़ सकते है|

Dry Kala Chana

आज हम बनाने जा रहे हैं चना मसाला| इसे हम काला चना भी कहते हैं|इसे आमतौर पर नवरात्रि के दिनों में बनाया जाता है| यह नवमी के दिन कन्याओं को पूरी के संग खिलाया जाता है| इस दिन 9 कन्याएं बुलाई जाती है उन्हें काला चना पूरी और सूजी या आटे का हलवा दिया जाता है

Ingredients:

  • 200 gm kala chana
  • 1 medium sized sliced onion
  • 5-6 cloves Garlic (chopped)
  • 2 piece green chilly (chopped)
  • Coriander leaves (Chopped)
  • 1/2 tsp red chilly powder
  • ¼ tsp turmeric powder
  • 1 tsp Coriander powder
  • ¼ tsp mango powder
  • ¼ tsp garam masala
  • 2 tbsp Mustard oil
  • Salt to taste
  • ¼ cup water

How to make:

  1. Wash Kala Chana in running water for 3-4 times and then soak it overnight. After soaking they will double up in size. Drain the soaking water.
  2. Take a pressure cooker, put kala chana, Onion, chopped garlic, green chily, coriander leaves, all the dry masala and mix it well.
  3. Add mustard oil, salt with ¼ cup of water.
  4. Cover the lid and put the pressure cooker on medium flame and cook till the kala chana gets tender.
  5. Pressure cooks kala chana in 15 mins or in 5 whistles; make sure the whistle won’t release the steam out.
  6. When all the steam gets released open the pressure cooker.
  7. In case if there is some water in it, then saute the chana on a low flame so as to avoid burning.
  8. Mix it well and let the chana cook in the masala for a couple of minutes till all the water gets absorbed. Remember to keep on stirring so that the dry chana masala do not stick to the bottom of the pan.
  9. Garnish dry kala chana with chopped coriander leaves.

सुखा काला चना कैसे बनाते है:

  • काले चने को 3-4 बार साफ़ पानी से धो लें और इसे रात भर  भिगो दें ।  भिगोने के बाद वे आकार में दोगुनी हो जाएगी। पानी से निकाल लें ।

Kala chana

  • एक प्रेशर कुकर, काला चना, प्याज, कटा हुआ लहसुन, हरी मिर्च, हरा धनिया, सभी सूखी मसाला को डाल दें और अच्छी तरह से मिला लें।

  • सरसों का तेल, नमक और १/४ कप पानी मिलाएँ ।

  • ढक्कन लगाएँ  और मध्यम आंच पर प्रेशर कुकर रखें और जब तक काला चना नरम न हो जाए तब तक पकाएँ ।

  • 15 मिनट   या 5 सीटी बजने तक काला चना पकाएँ ; निश्चित करें कुकर से भाप बाहर नहीं निकालें ।
  • जब सभी भाप  प्रेशर कुकर से निकल जाए तब कुकर खोलें ।

  • अगर इसमें थोड़ा पानी है, तो चना को धीमी आंच पर सुखाएँ ।

  • इसे अच्छी तरह से मिलाएं और जब तक सब पानी सुख नही जाता है चना को  मसाला के साथ पकाएँ । ध्यान रखें  सूखा चना मसाला पैन के नीचे सटे नही ।
  • सूखे काला चने को कटी हरी धनिया से सजाएँ ।

How to make Dry Kala Chana Recipe

We are making dry chana masala or black chana masala recipe today. Dry Kala Chana or sookha kala chana is specially made during Navratri. Punjabi Kala Chana is made during the last day of Navratri “Navami” with Puri.

Dry kala chana on a deep vessel with coriander leaves and green chilli on top with a slice of lemon and some onion rings and light background with onion and tomato in a basket.

You May Other Recipe-Suji Ki Kachuri, Vegetable Pulao, Dum Aloo, Bread Paneer Cheese Roll etc.

On this day of Durga Puja, 9 Kanyas(Girls) are invited and served with Kaala Chana, Poories and Suji or Aate Ka Halwa. It got its significance to celebrate this day by serving Chana Puri to Kanyas.I had made this recipe by using onion and garlic for better taste. if you want to make it for navratri then you can skip onion and garlic.

I also prepare it during other days for dinner or breakfast. It tastes great with Paratha. We can also eat this with Bread by adding some line and Onions.
