Veg Curd Sandwich Recipe – Healthy Breakfast Recipe

When it comes to packing lunch for my children, whenever I ask them for choice, it’s all about Mayo-Cheese-Cheese-Mayo. Now, for a typical Indian household, cheese or mayo are not fundamental grocery items, so one day I just ran out of money to buy cheese or mayo; and I hate buying those small packets, since I have a family to feed, and those last a day or two.

You may also like: Veg Mayonnaise sandwich, Green chutney for sandwich, shahi sandwich, Potato sandwich, etc

No point. Hence, just skipped it. Now, it’s not that my children do not like anything else in their lunch box; it’s just their comfort food.  So as the very same day, I got a “special request” for sandwiches (expected with lots of cheese), I just made Vegetable curd sandwich. From that day on, they are all about cheese-mayo-curd…. So here goes my special Snacks recipe for survival.

Veg Curd Sandwich Recipe - Indian Vegetarian Recipe

This yogurt sandwich recipe is very easy to make at home. It's a very simple Indian vegetarian recipe. We have used curd in this recipe.

Ingredients

  • ½ Cup hung curd
  • 6 slices white bread
  • 1 tbsp Cucumber Grated
  • 1 tbsp carrot Grated
  • 1 small onion Finely chopped
  • 12 tsb Black pepper
  • Salt to taste
  • Butter to brush

Instructions

  • Squeeze the grated carrot and cucumber and discard the excess water.
  • Put hung curd in a bowl and add all the veggies and spices (except bread).
  • Mix until well combined.
  • Take a bread slice, spread a thick layer of hung curd mixture on the bread and then cover with another slice of bread to make the sandwich.
  • Grease both the side of the bread with butter.
  • Heat non-stick pan and put the sandwich in a pan. Cook for a minute from lower side.
  • Flip the sandwich and cook till both the sides turn golden brown
  • Potato Sandwich is ready, slice them diagonally. Serve the sandwich with Cilantro Chutney or tomato ketchup.

Notes

You can also use brown bread to make curd sandwich.
Squeeze the water of cucumber and carrot otherwise curd will become thin.
I have not used green chilly but if you want spicy then add as per your taste.
You can also add veggies as per your liking.

How to make Veg curd sandwich:

  •  To make hung curd put the curd in a strainer and keep a bowl under the strainer to collect the liquid.Keep yogurt with strainer for an hour so that all liquid separates from the curd. After an hour you get a thick cheese like curd called hung curd.

  • Put hung curd in a bowl and add all the veggies and spices (except bread).

  • Mix until well combined.

  • Take a bread slice, spread a thick layer of hung curd mixture on the bread and then cover with another slice of bread, press it gently to make the sandwich.

  • Grease both the sides of the bread with butter.

  • Flip the sandwich and cook by pressing it with the spatula till both the sides turn golden brown and crisp.
