Veg Mayonnaise Sandwich Recipe| Breakfast recipe

My blog defines Indian vegetarian food, I know! And also know that sandwich is actually an “English recipe”. However, this wholesome and super functional food is not only a regular at my house; it has at ease been a part of the general urban Indian daily meal plan, for a long time. Hence, the Indian cuisine or my personal blog does not exclude it.

I am sure you will relate to me, that in a household like that of mine, with the package of super busy husband and school children, the presence of handy or finger food is the most functional way to their hearts. Vegetarian mayonnaise sandwich, a superb Breakfast recipe cum Snacks recipe is an excellent way to supply sufficient nutrition on the go.

In my family, every body eats all kinds of vegetables. Luckily, I don’t have to face limitations regarding which veggies to cook! But, if you have to face such problems, then you can use a recipe like sandwich, to artfully sneak in a patty made with the most disliked yet highly nutritious veggies. Mayonnaise is delighted by most people, and this dressing is likely to cover and hide flavors of any disliked veggies. I’m sure your dear ones are going to love it, and much to your peace, will be supplied with the most nutritious vegetables. Serve this as after school snack, or breakfast, or pack in lunchbox, its multipurpose.  You can even use the dressing as a salad.

If you are using watery vegetables, like cucumber, then make sure to squeeze excess water, otherwise it will make your bread soggy. Don’t throw away this water, use it to make mocktails or as vegetable stock.

An essential part of this sandwich is the bread. Try not to make it with stale or refrigerated bread, use good quality fresh bread instead. You can use any bread of your choice, also can use subs. I am showing you a soft and crisp toast version of it, which is ideal for eating instantly. However, if you are packing it in a lunchbox, especially non-insulated one, then cut the sides, and avoid the crispy toast, instead make a soft light toast. Otherwise, the sandwich will be hard at the time of eating, and if gets cold, the texture can become stale.

Enjoy it with ketchup, coriander or mint chutney. I sometimes combine the mayo with hung curd, and I fully squeeze out the excess water of the curd, it works as excellent binder for the vegetables.

Veg Mayonnaise Sandwich Recipe

This sandwich recipe is a combination of taste and health. I prepare this sandwich at my house on regular basis and everyone of us simply love this veg mayonnaise sandwich.

  • 6 slices white bread (brown bread)
  • 2-3 tbsp Mayonnaise ( or as required)
  • 2 medium sized Onion (finely chopped)
  • 1/3 cup Capsicum (finely chopped )
  • 1/4 cup Carrot (grated )
  • 1/3 cup cabbage (grated )
  • Salt (to taste)
  • ½ tsp black pepper
  • 12 Coriander (chutney)
  • 12 Oregano
  • 12 Red chilly flakes
  • Butter
  1. Put all the chopped vegetables (Onion , Capsicum , Carrot , Cabbage )in a bowl in a mixing bowl.Now add Mayonnaise , salt, Black pepper and Mix until well combined.Veg Mayonnaise mixture is ready.
  2. Take 2 slices of bread and spread a teaspoon of coriander mint chutney on one slice of bread.
  3. Now spread a thick layer of veg mayonnaise mixture on the bread and then cover with another slice of bread to make the sandwich.
  4. Grease both the side of the bread with butter.
  5. Heat non-stick pan and put the sandwich in a pan. Cook for a minute from lower side.
  6. Flip the sandwich and cook till both the sides turn golden brown and crisp.
  7. Veg mayonnaise Sandwich is ready, slice them diagonally. Serve the sandwich with Cilantro Chutney or tomato ketchup.

You can also use brown bread to make curd sandwich.
Squeeze the water of cucumber and carrot otherwise curd will become thin.
I have not used green chilly but if you want spicy then add as per your taste.
You can also add veggies as per your liking.
