This is nothing but scrambled cottage cheese cooked with onion, tomatoes and capsicum generally for breakfast.

There are times when I really don’t feel like preparing meals and this is exactly when Paneer Bhurji comes to my rescue. It is not only a breakfast recipe but also the best lunch box meal that takes only 10 minutes to prepare and 15 minutes to cook. So if you are a vegan and wish to prepare a versatile dish then try this out. You can either team it up with Roti or Parantha or at times use it as a stuffing for your sandwich. There are times when guests arrive uninvited and this is when you can use it as a filling to prepare Kathi Rolls and Puff Pastry.

When it comes to nutrient quotient this popular preparation of spicy crumbled cottage cheese definitely scores high. With all that protein content, it sure is a healthy dish for your kids. Do you know that this cuisine is not only a North Indian favourite but also preferred in Southern India? Yes, this is somewhat true. I have been to the southern part of our country and found the local cooks at restaurants using it as a stuffing for Dosa. I was surprised to find it extremely versatile as a dish.

An important tip to the cooks out there- always prepare the bhurji and add it to the moist mixture in pan, just before serving. You sure don’t want it to turn a little soggy, do you? Another secret to a scrumptious Paneer Bhurji is the usage of soft cottage cheese. This can either be homemade or bought from the store but has to be fresh.

Ingredients

  • 250 gram Paneer
  • ½ cup tomato finely chopped
  • 1 cup onion finely chopped
  • 1/3 cup capsicum finely chopped
  • 1 tsp ginger garlic paste
  • 1 tsp cumin seed
  • ¾ tsp Salt
  • 2 tsp oil
  • ¼ tsp turmeric powder
  • ½ tsp garam masala
  • Coriander leaves Freshly chopped as required

Instructions

  • Crumble paneer and keep aside. I have used homemade paneer to make this recipe.
  • Heat oil in a pan, once the oil becomes hot adds cumin seeds and sauté it for few seconds till it becomes light brown.
  • Now add ginger garlic paste and again sauté it for few seconds till raw smell goes away. You can also use freshly crushed ginger garlic.
  • Now add chopped onion and sauté it on medium flame till it becomes translucent.
  • Now add chopped tomatoes, green chilly, capsicum and give a nice mix.
  • Add all the spices turmeric powder, garam masala, salt and sauté everything for a minute.
  • Lastly, add crumbled paneer and cook it on low flame by stirring continuously for few minutes or till all the spices get blended well.
  • Paneer bhurji is ready to serve.
  • Serve hot with Roti, Parantha or you can use it to make sandwich also.
