Besan pyaaz ki sabzi is a very popular Indian sabzi recipe – I feel Besan Pyaaz ki Sabji is the finest dish, having gram flour and onion as its main ingredients. I still remember its wonderful aroma when my mother served it to me when I was a kid. To tell you the truth, my mother did not have the slightest idea about this recipe, until she met Mrs Reddy. She was a talented woman in our neighborhood, blessed with culinary skills. It was she, who taught my mother this delectable sabji.

You will be surprised to know that this delicious dish will take only 5 minutes to prepare and a mere 10 minutes to cook. I have penned down this recipe because not only it is easy to prepare but also consumes the lowest possible time. Serving it to your family members as a lunch or dinner item will be the ideal thing to do. Food lovers generally have it with chapati, paranthas and accompaniments like Raita. However, to me, it works best as a side dish and tastes great with butter naan or rice. You could either go for the first way or try my way of enjoying this sumptuous recipe.

When I grew up, I learnt it from my mother and today I want to share it with you all. If you are out of vegetable stocks at home, then I would suggest you this recipe. A vegan recipe as we all know, it forms an integral part of our Indian cuisine. The best part about it is that you will be requiring only onion, tomatoes, garlic and coriander leaves for this new fusion! You must be wondering what kind of a recipe is it, considering the technique. To satiate your hunger for knowledge, I would say it is a sauté recipe. My mother has taught me to prepare it by sautéing every ingredient, ensuring medium heat at the time of cooking.

Do you want to know what the key to this recipe is? It is obviously stir-frying the besan until it is fully roasted. I have seen people replacing regular red onions with spring onions, but to me, the former tastes far better than the latter. I am sure this can be a better lunch box recipe for your kids.

Ingredients

  • 1/2 kg Onion thinly sliced
  • 1/2 cup gram flour besan
  • 2 tomatoes small chopped
  • 1 tsp ginger grated
  • 4-5 cloves garlic of chopped
  • 1/2 tsp cumin seed
  • 1/2 tsp Mustard seed
  • 1/4 tsp Asafoetida
  • 1 tsp salt or as per taste
  • 3 tbsp oil
  • coriander leaves Freshly chopped
  • Few sprig curry leaves
  • 1/4 tsp turmeric powder
  • 11/2 tsp coriander powder
  • 1 tsp Kashmiri red chilly powder
  • 1/4 tsp garam masala
  • 2 pieces green chilly of chopped

Instructions

  • Put gram flour in a pan and dry roast it on low flame for 3 to 4 minutes. Once roasted take out from the pan and keep aside.
  • Heat oil in a pan; once the oil becomes hot add cumin seed, mustard seed, asafetida and cook till mustard seeds starts crackling and cumin seed becomes light brown.
  • Now add grated ginger, chopped garlic , few sprig of curry leaves and sauté for few seconds till raw aroma goes away.
  • Now add finely chopped green chilly sauté it for few seconds and then add thinly sliced onions, mix it well and cook it on medium flame till onions becomes little soft. It takes around 3 to 4 minutes.
  • Now add chopped tomatoes, mix it well.
  • Add all the spices: salt, red chilly powder, coriander powder, turmeric powder, mix it well and cook till the tomatoes becomes soft.
  • Once tomatoes become soft add roasted gram flour, garam masala, finely chopped coriander leaves and sauté it for 2 minutes till all the spices gets blended well.
  • Besan pyaz ki sabji is ready to serve.
  • Serve hot with roti, paratha or rice or you can also pack it in kids’ tiffin box.

How to make besan pyaz ki sabji:
