Spicy potato curry recipe for all you potato lovers.I have heard a lot of people say that they are kind of bored to prepare the mundane food, which I can’t really relate to. I think, it is the mundane that personify our life and there lies our comfort zone. Therefore, I treat every day as a new beginning, and feel that I must love the “same old”, so that I can make them more interesting.

That is exactly what my spicy potato curry is all about. If you see it as a mundane food, it can be a bland and boring thing, but with a little touch of love, the same thing can turn into a delicious meal.

Spicy potato curry is not my invention, of course; it is a very popular Indian dish and is one of the easiest Lunch recipe. Every region in India has their very own style of making potato curry, yet there is still much room for new inventions.

One afternoon, I was alone at home, with all the lunch boxes packed and parceled for my little ones and their father. Once they left, I had to cook myself lunch. That day I was feeling so lazy (yes, even I do sometimes feel lazy to cook), and wanted to cook something with the least work needed. I had a few boiled potatoes in the fridge, along with some leftover rice. I just made this spicy potato with a little bit of gravy, and had it with the rice. Usually, we have potato curry with roti, chapatti or paratha, but that meal was a scrumptious one, I just loved it with the rice.

Potato is a comfort food throughout the world, is one of the most basic ingredients in anyone’s kitchen, be it in India or anywhere else. I hear a lot of advice, on limiting the consumption of potato, but I would say that it is not about reducing the amount of potato, but increasing the amount of other vegetables and grains. To have a balanced diet is the cue. Potato is a very healthy vegetable, and the complex carbs are actually very essential nutrients.

I like this potato curry, with rather saucy gravy than runny gravy. The more chatpata or tangy, the better, this is a typical Indian style recipe. This can very well go as a side dish in parties too. The taste is what matters the most. I especially like to serve it to those relatives who say, “preparing mundane food is boring”.

Spicy Potato Curry

Ingredients

  • 6-7 Pieces potatoes boiled and cutted
  • 2 medium sized Onions finely chopped
  • 1 medium sized tomato chopped
  • 2 tsp Oil
  • 3 pieces green chilly chopped
  • 1/4 tsp mustard seed
  • ¼ tsp cumin seed
  • ½ inch ginger grated/ginger paste
  • 1/2 tsp garlic chopped
  • 1/4 tsp turmeric powder
  • 1 tsp Red chilly powder
  • 3/4 tsp Coriander powder
  • ¼ tsp Garam masala
  • Kasuri methi
  • Freshly chopped Coriander leaves
  • Salt to taste

Instructions

  • Heat oil in a pan and when the oil becomes hot add mustard seed, cumin seed and let it splutter.
  • Once the seed starts crackling add grated ginger, chopped garlic, green chilly and stir it for few seconds.
  • Add chopped Onions and stir it on medium flame till the onions becomes translucent.
  • Add chopped tomatoes, salt and mix it well.
  • Add turmeric powder, coriander powder, red chilly powder and cook till the tomatoes become soft and mushy.
  • Add cutted boiled potatoes, chopped coriander leaves, garam masala, kasuri methi and mix it well till all the spices gets well combined.
  • Add water as per the desired consistency, mix it well and bring it to boil.
  • Cover the lid and cook for 2-3 minutes.
  • Open the lid and the spicy potato curry is ready to serve.
  • Serve hot as a side dish with Chapati and rice.

How to make Spicy Potato Curry:

  • Heat oil in a pan and when the oil becomes hot, add mustard seeds, cumin seeds and let it splutter.

  • Once the seed starts crackling add grated ginger, chopped garlic, green chilly and stir it for few seconds.

  • Add chopped Onions and stir it on medium flame till the onions becomes translucent.

  • Add chopped tomatoes, salt and mix it well.

  • Add turmeric powder, coriander powder, red chilly powder and cook till the tomatoes become soft and mushy.

  • Add sliced boiled potatoes, chopped coriander leaves, garam masala, kasuri methi and mix it well till all the spices gets well combined.

  • Add water as per the desired consistency, mix it well and bring it to boil.

  • Cover the lid and cook for 2-3 minutes.

  • Open the lid and the spicy potato curry is ready to serve.
  • Serve hot as a side dish with Chapati and rice or even poori.
