Its needless to say what is Instant khaman dhokla. But will have to say something.Its a popular Gujrati Recipe along with Phaphra, Khakda etc. Its made with besan and suji.
It adds a special flavor with some sweet and some salty. Its simply delicious.I have also made bread dhokla sandwich recipe. Check it out!

Instant Khaman Dhokla | Besan Dhokla | Gujrati Dhokra
Ingredients
- 1 cup Gram Flour
- 1 ½ tbsp Semolina suji
- 2 piece Green chilly of chopped
- 2 inch Ginger piece of Grated
- ½ cup yogurt
- 1 Tsp Fruit Salt ENO as known in India
- Pinch Turmeric Powder
- 1 Tsp Sugar
- 1 ½ Tbsp Oil
- 1/4 cup water
For Seasoning:
- 11/2 Tsp Mustard Seeds
- 3 Tsp Coriander Leaves of chopped
- 2 Tsp Sugar
- 6 Green Chili Slice each into 2 pieces by center
- 10 Curry Leaves
Instructions
- ) Take a Bowl and add gram flour, Curd, Semolina, water and mix it well for a minute.
- ) Add all the Ingredients Ginger, chilli, turmeric powder, salt, sugar, oil and mix them properly into a smooth batter. Make sure there should be no lumps in it.
- ) Now the batter is ready. It should not be too thick or too light like a dropping water. It should have medium thickness and have a slow dropping consistency.
- ) Take a Microwave safe bowl and Grease the dish all around so that Dhokla does not stick to the bottom and sides of the pan.
- ) At last add Eno (fruit salt) in batter and mix it. Within a minute you will notice its size would increase to almost double and batter becomes fluffy.
- ) Transfer this batter immediately into the greased pan and fill it upto ½ inch thickness.
- ) Dhokla dish is now ready to go into Microwave.
- ) Keep the dhokla dish in Microwave for 4 minutes on highest power level.
- ) Take Out the pan after 4 minutes and let them cool for few minutes. Cut fluffy khaman dhokla into small squares or Rectangular shaped pieces using knife.
- Directions for Tempering:
- ) Heat oil in a pan and add mustard seed, when mustard begins to crackle add curry leaves and green chily, stir for a min.
- ) Add 1 cup of water, sugar and coriander leaves, mix well and bring it to boil.
- ) Turn the flame on high and cook for 2 minutes.
- ) Switch off the flame.Tempering is ready, pour it over dhoklas and toss gently until each dhokla is coated well and gets fluffy.
- ) Dhokla is ready to serve.

Notes
2) Dhokla can be served at room temperature and can be stored in refrigerator for 2 days.
3) Transfer the batter immediately into the greased pan otherwise it will not become spongy.

- I forgot to cut dhokla before tempering so in the picture below i cutted after tempering and again i pour some temper on it. Always cut dhokla into pieces before tempering so that each dhokla gets coated well and becomes fluffy.
- Dhokla is ready to serve.
Note:
- After seasoning keep Dhokla for 15 minutes so that all the seasoning gets settled down and reaches all the corners and Dhokla becomes moist from inside.
