I am not sure, why is it called Frankie, and who invented it. However, the closest countenance is that it may have hailed from the Frankfurter or hot dog, which is a Western street food that uses the same idea of combining a filling and bread. Overall, Frankie is a modern food not older than the 19th century.

  • 1 tsp garlic finely chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp soya sauce

Instructions

How to knead the dough for kathi rolls:

  • In a mixing bowl add wheat flour, salt and oil, mix it well. To make soft dough add water as needed and make smooth and soft dough just like roti. For detail recipe you can watch the recipe of how to make roti.
  • Cover the dough and let it rest for 30 minutes to get set. Meanwhile let’s prepare our stuffing.

To make stuffing:

  • Heat butter/ oil in a pan, once the oil becomes little hot add finely chopped garlic and sauté it for few seconds on medium high flame till raw smell goes away.
  • Now add finely chopped onion and sauté till it becomes translucent.
  • Now add all the veggies and sauté it on high flame till it becomes little crunchy. Do not over cook the veggies and even don’t cook on medium flame as veggies will release water and it will become mushy.

Process of making rotis for veg kathi roll/ Frankie:

  • Uncovered the dough and knead it for few seconds. Divide the dough into 8-10 equal parts. I am going to make medium size veg Frankie but if you want to make it big in size then you can divide the dough into 5-6 equal parts, it all depends upon the size you want to make.
  • Dust the rolling surface with some dry flour and put one part of the dough and dust it with dry flour and gently roll it evenly to make thin roti. You may use some dry flour while rolling the roti but do not add too much otherwise roti will become hard. To makes frankie always make thin roti, do not make thick roti.
  • Heat non-stick pan, once the pan becomes hot place one roti on a hot pan and cook it on medium high flame. Wait for 2 minutes or until the bubbles starts appearing on the upper surface of the roti. Flip the roti, press it down with spatula and apply some butter or you can use oil and cook from both the sides until golden spots appeared. You can also make roti without applying butter or oil.
  • Once cooked take out from the pan and repeat the same process for rest of the roti.

Process of making veg Frankie/ kathi roll:

  • Place single roti on a plate and spread tomato sauce evenly all around, You can also spread green chutney, chlly sauce , schezwan chutney or any chutney of your choice to make veg Frankie.
  • Now place 2 tbsp of veg mixture at one side of roti, put some grated amul cheese. To close the roll, fold one side of the roti and roll it tightly to make kathi roll. Seal the edges with the help of tooth pick or you can wrap them in butter paper from the base so that stuffing does not fall down.
  • Veg kathi roll/ frankies are ready to serve and it’s perfect recipe for kids tiffin box. You can also cut kathi roll into half and serve
